Sneaky Sausage rolls have been a saviour of mine on MANY occasion, as they are a super frugal treat which the kids love, they are great at getting the kids  involved in making and are also fabtastic for hiding a whole lot of goodness in ( Honest !!).

With the help of Provident Personal Credit, Myself and a whole host of Frugal bloggers are giving you some ideas on how to spend the next bank holiday weekend with the family on a budget!.  With Five proposed Bank Holidays on the horizon ,prices of days out and adventures on the up, but unfortunately our disposable income staying the same , this really is a challenging time for most families, and staying at home sat watching Cbeebies is not only brain numbing but wasted free time.  Our unpredictable weather, also plays a huge part in this fate, so doing little but frugal activities at home that keeps the kids happy and you sane is a no brainer. Getting the kids to have a go with this super simple  Sausage roll recipe, is a great adventure for them and they can often feel really proud with the results, also this is pretty low on the messometer scale, so that is also a brucie Bonus !. This has also come in at well under £2 for 9 Sausage rolls, so not only is it a frugal activity, but it is also lunch taken care off !.

For 9 Sausage rolls You will need……

6 Sausages

1 Packet of ready made Puff Pastry

2 Spoonful’s of Linseed ( Great for Omega 3 and fibre)

1 FINELY grated carrot or courgette

1 Egg

Turn the oven on to a medium heat and line a oven tray with baking paper. Slit the sausages down the centre and remove the skin, if your brave and don’t mind the mess, let the kids squeeze the meat out. In a bowl add the meat, carrots and linseed and mix this together well. If you want to add some bread crumbs this can also bulk out the meat ( try wholemeal, so it makes it a little healthier).

Beat the eat and paint along the one edge of the pastry, fold the pastry over so that the sides meet and then seal together, fingers or a fork will do the job nicely. Cut the strips into three sausage rolls per strip, so that you end up with nine and place them on to the baking tray. Paint some egg wash over the top, make some cuts to the top of the pastry,

Pop into the oven for around ten minutes or until the pastry is a nice golden colour and remove from the oven. Let them stand for a while, as the insides will be boiling and then Enjoy.

These are a great Picnic addition or even a quick snack, so are fab to make in advance. So Don’t Break the Bank Holiday,
